Oyster Sauce Chicken

Ingredients:     Oyster Sauce, 5-8 pieces of sliced ginger, salt, black pepper, sugar, soy sauce, 8-10 closed cup mushrooms or oyster mushrooms (sliced), 350 grams of chicken (chopped into pieces)

1.     Marinate chicken with sprinkle of salt, black pepper, some soy sauce and oyster sauce.

2.     Add oil to saucepan. When oil is hot, add in  sliced ginger and fry until you can smell the aroma of the ginger.

3.     Add the chicken in and fry  for about 2 minutes. After that, add about 3 tbsp of oyster sauce and 1/2 cup of water. Let it simmer for about 10 minutes.

4.      Finally add in the sliced mushrooms and let it cook for at least another 5 minutes.

5.     Add in some sugar or more oyster sauce to your taste. If you have black sauce you can add a little in too to make it look darker.

That's it !!

 

                                                            Sweet & Sour Chicken

Ingredients:     Sugar, soy sauce, salt, black pepper, 1 large onion (cut into strips), Lea & Perrins worchester sauce, tomato sauce, 350 grams of chicken (chopped into pieces)

1.   Marinate chicken with sprinkle of salt, black pepper and soy sauce.

2.  Add oil to saucepan. When oil is hot, chuck in 1/2 of the onion strips and fry until caramelised.

3.  Add in the chicken and fry for about 2 minutes. After that add 1/2 cup of water, 3-5 tbsp of tomato sauce, 1/2 tsp of worchester sauce.

4.  Stir well. Then add in 1 1/2 tbsp of sugar. Let it cook and meanwhile add in the rest of the onions.

5.  Add more sugar if it's too sour or add more tomato sauce if it's too sweet to your taste.

Simple-dimple !!

 

                                                              Chicken Rice

Ingredients:     1-2 cloves of garlic (chopped into tiny pieces), 4 slices of ginger (cut into strips), soy sauce, oyster sauce, salt, 350 grams of chicken (chopped into pieces), 2 cups of fragrant rice (uncooked)

1.     Marinate chicken with salt, soy sauce and oyster sauce.

2.     Switch on rice cooker and pour a little oil into it. Add in the garlic and ginger strips and fry for a while until there's aroma.

3.     Add in the rice and mix with the garlic & ginger.

4.     Now, place the chicken pieces on top of the rice and add about 2 1/2 cups of water or slightly more.

5.     Add in a dash or two of soy sauce and oyster sauce to flavour the rice.

6.      Cover the rice cooker and you just have to wait for it to switch off automatically.

Easy-peasy !!

                                                               Chinese Style Salmon

Ingredients:     Soy Sauce, sugar, black sauce, salt, black pepper, teriyaki sauce, chopped garlic, salmon steaks

1.     Marinate salmon with sprinkle of salt, black pepper, soy sauce and teriyaki sauce.

2.     Heat up oil in saucepan and fry garlic until fragrant.

3.     Place the salmon on the pan. When the surface of the underside is cooked, turn them over to cook the other side.

4.     Add about 1/2 cup of water into the pan. Then, add in 2 tbsp of black sauce, 1 tbsp of sugar and a few dash of teriyaki sauce and soy sauce. Mix the sauce well.

5.     Let it simmer until cooked. This dish is supposed to be slightly on the sweet side.

Quick-trick !!

 

                                                                                 Grilled Salmon

Ingredients:     Butter, salt, pepper, salmon steaks

1.     Dash salt and pepper evenly on to salmon steaks.

2.     Place 1/2 tsp of butter on each salmon steak and put them in the grill.

3.     When the topside has turned brown, flip the steaks over and grill the other side.

4.      Add more butter if it looks dry.

5.      It's done when it's brown ! Serve with toasted potato waffles and steamed brocolli & carrots.

                                                     Ginger & Spring Onion Beef

Ingredients:      5-8 slices of ginger (cut into strips), 10 stocks of spring onions (cut into long strips), salt, soy sauce, black pepper, 350 grams of beef (cut into small pieces)

1.     Marinate beef with sprinkle of salt, black pepper and a couple dashes of soy sauce.

2.     Heat a little oil in saucepan. Add in the ginger and spring onion strips and fry until fragrant.

3.     Now chuck in the beef and stir fry. Add a little water if it looks too dry.

4.     Add more seasoning according to your taste.

                                                                Soy Sauce Pork

Ingredients:     Sugar, soy sauce, salt, black sauce, 4-5 cloves of garlic, 350 grams pork (dice it), eggs

1.     Marinate diced pork with salt and soy sauce.

2.     Smash the cloves of garlic with a cleaver. Fry them in a heated saucepan for a very short while.

3.     Add in the pork and stir fry for a moment. Then add in abour 3/4 cup of water.

4.     Now, add in 2-3 tbsp of black sauce, a couple dashes of soy sauce and 1 tbsp of sugar.

5.     Let it simmer for at least 1/2 hour. Meanwhile make some hardboiled eggs.

6.     Add in more sugar or soysauce according to your taste.

7.     Peel the eggs and add into the saucepan together with the pork when it's ready to be served.

...simply delicious !!

 

                                                            Big Fat Omellete with Pork Mince

Ingredients:     4-5 eggs, salt, soy sauce, black pepper, 200 grams pork mince, 1 large onion (cut into strips)

1.      Marinate pork mince with sprinkle of salt, soy sauce and black pepper.

2.     Beat the eggs and add in a couple dashes of soy sauce, some salt and black pepper.

3.     Add the onions into a heated frying pan. Stir fry until half caramelised.

4.     Then mix in the pork mince. Fry until it's done. Spread out the pork mince and onions on the pan.

5.     Pour the eggs in and make sure it spreads well to every nook and cranny.

6.     Flip the omellete to cook the other side.

It's yummier if it's browner, but of course don't burn it ! And it's also quite normal if it ends up srambled instead, well so long as it fille up your tummy.... :p
